The basic idea of Blackjack is that you want to have a hand value that is closer to 21 than that of the dealer, without going over 21. You are not competing against other players on the table, only against the dealer (the house). There are well-known basic strategies that players can follow, to maximise your odds of beating the dealer.
Once all the bets are placed, the dealer will deal two cards to himself and the players. Players' hands are normally dealt face-up, showing their total value. The dealer will flip one of his two cards over, exposing its value. Once the cards are dealt, play proceeds around the table, starting at the first seat to the dealer's left.
To "hit" is to indicate to the dealer that you want another card. There is no limit to the number of times you can "hit", but if you go over 21, or "bust", you loose, and the dealer will collect your cards and your bet. When you decide to stick, you take the chance that the dealer will go bust in trying to attain a higher value hand than yours. The dealer then turns over his second card and decides how he wishes to play.
*Note: The dealer must play his hand in a specific way, with no choices allowed. The most common rule that a dealer must play by is that he must continue to "hit" until his cards total 17 or greater.
The hand is over when either the player or the dealer hits 21 or closest to it, and thereby wins; or when either the player or the dealer goes "bust", and thereby loses. The player usually wins at odds of 1/1. e.g.. a $100 bet will win you $100, plus your $100 stake back.
The exception being when you hit "Blackjack", which pays 3/2. e.g. A win of $150, plus the $100 stake.

Purse Play is a Blackjack variation where players "buy-in" to the table for an amount of cash and then play from that table's "purse". Players agree in advance how much each chip is worth. For each hand the difference in chips between players is multiplied by the per-chip amount to resolve how much money is transferred between players.
Head-to-Head Blackjack
In head to head Blackjack, beat your opponent, not the dealer! Two players sit at the Blackjack table and decide the amount of money they will bet for each game. Both players then receive an equal amount of casino chips “dollars”. In each game, the players will play through a pre-set number of rounds, trying to beat the dealer's hand to build up their chip-stack. To win any given round, players must beat the dealer's hand by having a hand worth more in terms of combined face value, without going over a total of 21. At the end of the last round, the player with the larger chip-stack wins the game and takes the money- not the dealer.
